Neychore(ghee rice) from kulsam khan

Ingredients:

Basmati rice-3cups
Water-4 1/2 cups
Onion-1 siced
Ginger garlic paste-1tbsp
Green chillies-4 (slit)
cinnamon,cardomom,cloves-2(each)
Ghee-4tbsp
Fried cahew and raisin-2tbsp
Onion-1(thinly sliced and fried crisp)


Method:


Soak rice for half an hour.

Boil water nicely.Heat ghee,add cinnamon,cardomom,cloves.

Now add sliced onion and fry till light brown.Add ginger garlic paste and fry for two minutes.

Drain rice and fry for 3 minutes.

Now add the boiling water and when the rice is 3/4th done,stir the rice, sprinkle the crisp fried onion ,cashew and raisin over it and close the lid and cook in medim low heat till done.

Remove from fire and fluff it with two forks so that the rice wont break and it will not stick to each other.
